Don't know what your financial situation is, but I learned GREAT stuff by going thru the training at my local public access television station. Otherwise, checking out "how to" websites is good, as well as any books that have LOTS of illustrations: a docu is all about PICTURES of stuff, so a book with well-rendered story board examples will be primo. Also, watch some award winning docu shorts, and take note of the camera work, lighting, etc., cuz even really good subject matter will lose it's "punch" if the technical bits are blech.

GOOD LUCK!!! :)
References :
Been there, etc.
